100% Chardonnay sourced from very young vines (this is the first time the grapes are being vinified), grown organically and planted in Roquemaure on clay soils.

The grapes are purchased from Lionel, a winemaker located just 15 minutes from Lolita's estate. Manual harvest on August 4th with direct pressing, gravity settling, and short fermentation and aging in tanks—it's a primeur! Racked one week before bottling. Unfined, unfiltered, and without added sulfites.
