Grape Variety – Blend: 100% Sémillon
Vinification: Fermentation with indigenous yeasts. Traditional vinification in stainless steel tanks. No malo-lactic fermentation control through SO2 addition. Fining with bentonite. Unfiltered wine. Total SO2 between 35 and 60 mg/L.
Tasting Notes: Aromas of ripe fruits, exotic notes, and apricot. Dense, long, fresh, and taut on the palate.
Average Annual Production: 2,500 to 3,500 bottles (75 cl)
Food Pairing: Pairs well with cheese, poultry, seafood, and foie gras.
