Confidential wine selection, small estates & old vintage
Profile: Northern Rhône-style Syrah.
Tasting: Silky and deep with great aging potential. Bouquet of stone fruits, fresh spices, and notes of garrigue.
On the palate, there’s a lovely liveliness and nice tannins that will integrate beautifully in the bottle over the years.
Vinification: The grapes are picked in the morning, sorted, destemmed, and placed in tanks upon arrival at the winery. Alcoholic and malolactic fermentations start spontaneously. Infused for 20 days in concrete tanks. Aged for 12 months in old barrels.
Food Pairing: Tenderloin of venison fondue.
