Château-Chalon Vin Jaune is made exclusively from the Savagnin grape, aged on blue marls that contribute to its finesse. Its aging lasts a minimum of 6 years and 3 months in unfilled oak barrels.
The layer of yeast that forms on its surface protects it from oxidation, and it is these yeasts that give it its powerful and distinctive aromas.
This wine is bottled in a 62 cl flask known as a "Clavelin."
Château-Chalon is best enjoyed at a temperature of 14 to 15 degrees Celsius, almost at room temperature.
