Appearance: The color reveals a warm brown and golden hue, with a slightly amber depth.
Nose: The nose is powerful, indulgent, and expressive, offering an enchanting fragrance. It exudes notes of stewed and juicy white fruits, accompanied by aromas of roasted nuts and subtle vanilla hints. After a few minutes of aeration, this delicate XO opens up with aromas of plums and mirabelles.
Palate: On the palate, the attack is smooth and ample, with flavors that confirm the olfactory notes. The ripe, stewed plum and mirabelle bring freshness to this old cognac, reminiscent of a grandmother's plum tart.
This is balanced by a finish of roasted nuts, such as cashews, characterized by gentle and lightly marked aging.
Pairing: Simple and accessible pairings include roasted mushrooms, plum tart, raspberry and white chocolate cake, crispy tartine with Roquefort and pear, lightly seared langoustines with vanilla cauliflower purée, thin slices of dried Grison, roasted pumpkin and carrot with duck, and Iberian ham.
